Recipe for Vegan Muffins


Hello, everyone! Welcome to my blog. In this post, I am going to introduce a recipe for vegan muffins. It is my original recipe inspired by my mother.
  • This recipe only has a few ingredients and steps.
  • It takes less than 10 minutes.
  • I veganized the recipe by changing the butter to peanut butter (100% peanuts), the milk to soy milk, and the sugar to maple syrup.
  • The muffins are not very sweet, so if you want to make them sweeter, I recommend adding another 2-3 table spoons of maple syrup.


Ingredients (for 3 muffins):

・Cake mix (50g)

 Cake mix contains flour, baking powder, sugar, and salt.

・Soy milk (46g)

・Peanut butter (30g)

・Sugar or Maple syrup (1 table spoon)

If you want to make them chocolate-flavored

・Cocoa powder (3 tea spoons)

Directions:

1. Mix all the ingredients in a bowl until the mixture is smooth.

2. Pour mixture into seperate cups.

3. Place in the microwave at 600 watts for a minute.

4. Done!







It tasted great, so you should definitely try making them. You can put toppings, for example fruits and maple syrup. I actually failed once. Here is a photo of my failed attempt.
